Grilled mackerel. Ingredients: Olive oil , salt, 1 lemon zest & juice , 2 fresh mackerel , 600 gms potatoes, 1 tsp wholegrain mustard, 1 tbsp white wine vinegar, 1 red onion (sliced), 1 fennel bulb (finely sliced) , 1 cup parsley (chopped) and freshly ground black pepper. Method: Preheat your grill to medium-high. Clean the mackerel and get rid of the bones. Squeeze a few drops of lemon juice, add zest, white wine vinegar, pepper, salt, and sprinkle with olive oil. Now, place the mackerel on the grill for at least five minutes. Turn after a couple of minutes. For salad, boil potatoes and cut them in half. Place the potato pieces in a mixing bowl and add a dash of olive oil, the rest of the lemon juice and zest, along with mustard. Use the remaining ingredients for garnish. |

Salmon Curry. Ingredients: 2 pounds salmon steaks, 1 large onion (chopped), 1 large tomato (chopped), 2tbsp lemon juice, 1tsp garlic paste, 1tsp ginger paste, 1 tsp red chili powder, 1tsp turmeric powder, 1tbsp coriander powder, 1tsp poppy seeds, fresh coriander leaves, salt and 1tbsps oil. Method: Marinate with lemon juice, salt and turmeric powder and half tablespoon of oil, and let it stand for 20 minutes. Stir fry onions and ginger garlic paste in half tablespoon of oil until they turn light brown. Add poppy seeds, red chili powder, turmeric powder, coriander powder and salt. Add chopped tomatoes and marinated salmon steaks to the mixture. Cook until salmon steaks are cooked. Garnish with chopped coriander leaves. Cod with Oranges. Ingredients: 4 oranges, Four thick pieces cod fillet fish, 2 thinly sliced red onion (you can also use regular onion if you are unable to find red onion). Method: Cut and peel two of the oranges and collect the juice of both the oranges in a cup separately. Now take the rest of the two oranges and dice them into small square pieces. Take the four pieces of cod fillet fishes and slightly sauté them in a pan with two tablespoons of olive oil over medium-high heat. Season it with salt and pepper and cook it for 5 to 8 minutes. Now place it on a platter and garnish. Linguine with garlic & tuna. Ingredients: 3 cubed red potatoes, Handful of cut green beans, 1 bowl linguine pasta, olive oil, tuna (fresh or canned), 1tbs minced garlic, thinly sliced roasted almonds, salt and pepper to taste. Method: Bring 2 cups of water to a boil. Add potatoes and beans to it and boil till soft. Drain water and keep vegetables aside. Boil whole wheat pasta. Now take a pan and heat 2tbs olive oil. Saute the minced garlic, and throw in the pasta with the tuna and veggies. Add the roasted almonds till they coat the pasta entirely. |
