Citrus Eccles Cakes (English Recipes)
Prep Time: 30 minutes - 1 hour | Cook Time: 30 minutes or less | Serves: 9 Dessert » Pastry » English Ingredients: For the pastry: 175g (6oz) Unsalted ****er 225g (8oz) Plain White Flour Pinch of Salt 1tsp Lemon Juice For the filling: 175g (6oz) Currants 50g (2oz) Chopped Mixed Peel (I didn't have this, so I just grated a couple of oranges) 50g (2oz) Muscovado Sugar (Didn't have this either, regular brown sugar seemed to work fine) Grated Rind of 2 Lemons (Didn't have this, I just used a few teaspoons of lemon juice) For finishing: 1 Egg, beaten Caster Sugar 50g (2oz) Unsalted ****er |

Step 1:
Sieve the flour and salt into a large bowl. |

Step 2:
Cut the ****er up into dice-sized pieces and dump it into the bowl along with the lemon juice and 100ml of iced water. |

Use a ****er knife to mix everything up until you have a soft dough. |
