What is Ghee? How is A2 Ghee different from regular ghee?
  • Ghee is a type of clarified ****er that is created by extracting the milk solids out of melted ****er. Ghee is good for health as it is a high source of healthy fats and ingredients like CLA or conjugated linoleic acid, which is said to help in weight loss. To manufacture ghee, a variety of milk sources are used, such as cow milk, buffalo milk, and goat milk. The source of the milk affects the physical and chemical properties of the ghee.
  • A2 Ghee is different from regular ghee as it is made from pure-bred cows, which yield high-quality, unadulterated, antibiotic-free milk. This is why A2 Ghee is also known as A2 Desi cow ghee. Usually, Gir cows are used to milk and consequently manufacture A2 ghee.
How is A2 Ghee manufactured?
  • To ensure that the A2 ghee produced is of the highest quality, A2 ghee is made using the traditional mechanical method or the ‘Hand-Churned Bilona Process’. Although the quantity of yield is not high using this method, the quality of A2 ghee is the best.
The Vedic method follows these steps in the preparation of A2 desi cow ghee that are listed as follows:
  • Set aside the milk to curdle naturally. Do not add reagents like vinegar to speed up the process. The process has to be completely natural.
  • Then once curdled, the curd and water are hand-churned slowly and gently until the fats rise to the top.
  • This is then slow-cooked for a long time so that the nutrients are preserved.
Characteristics and Ingredients of A2 Ghee:

As A2 ghee is made from organic cows and no other ingredients or additives are added during its manufacturing process, it differs in quality from the regular ghee and has the following characteristics:
  1. It is yellowish in colour, which is imparted by the beta-carotenes found in A2 milk. Beta-carotene is a carotenoid and a precursor of Vitamin A.
  2. A2 ghee has a very strong and rich aroma and flavour and is therefore easily used in any meal. It is especially used in the preparation of desi sweets like halwa.
  3. A2 ghee is grainy in texture, unlike the liquidised version of regular ghee.
