Default Homemade Pasta with Alfredo Sauce



Prep Time:
2 - 3 hours | Cook Time: 30 minutes or less | Serves: 8

Ingredients:

Homemade Pasta with Alfredo Sauce recipe picture 1As Southerners know, peppercorns and ****ermilk get along famously, and this pasta takes advantage of that by incorporating coarsely-ground pepper into the noodles themselves.

3 cups durum semolina
3/4 to 1 cup ****ermilk
1-2 teaspoons freshly-ground pepper

Step 1:
Put all of the semolina into a large bowl. Make a well in the center of the flour and pour in the ****ermilk. Grind pepper over the top until it looks right.

Step 2:
Mix with a fork until the dough starts to clump into similarly-sized pieces.

Step 3:
Get your hands in there and work that dough until it comes together. If you started light on the ****ermilk you'll probably need to add a bit more to bring everything together.

Step 4:
Cover and leave at room temperature for at least 30 minutes. When you are ready to worth with the dough again, divide into four pieces. Keep the ones you aren't working covered with plastic wrap or a moist towel.
